The Sweet Potato experiment
Posted on 30 August 2010 | No responses
As a vegetarian, it’s shameful to say I have only had sweet potatoes a handful of times – at most. Not sure why. We didn’t really have them as kids growing up. In fact, I think the first time I had one was at my ‘Jewish’ friend Julie’s house. She made a HUGE Jewish type spread (think Thanksgiving spread) and she served sweet potatoes that were in a glass dish bubbling with butter, orange juice and marshmallows…WHAT? that was weird to me.
Fast forward to today…while at the grocery store stocking up so I can strategically plan yummy lunches, dinners and snacks, I spotted a sweet potato and decided to get one. I’m a potato girl inside and out. In fact, you’d think I was raised in Idaho (nope that was mom). Potatos are soo easy to make. I’ve never met one I didn’t like. Fried, mashed, baked, fried and sliced into ‘chips’ I’ll take em any way your servin them!

Today’s post is compliments of Erica aka alabaster cow
I love veggies. I mean it’s an obsessed love to the point that a few vegetables have taken out a restraining order on me (I can’t even be within five hundred feet of a zucchini squash). When people ask me why I decided to go vegan (and I use the term loosely considering there have been a few times I’ve cheated…) the first thing that pops up in my head is my eternal passion for all things healthy. The second thing? Cellulite.
I talk about my butt A LOT on my blog. My backside has been the featured star of many a post mainly because it’s a magical posterior. What used to be your run of the mill derriere, drowning in a sea of cellulite, is now as smooth as a baby’s bun. And I have my vegan eats to thank.
It’s funny how people respond to my new found eating habits. Some are completely supportive and are even inquisitive, wanting to learn more about veganism and healthy living in general (and heck, they want to know how to lose their cellulite too!). Others think I’m a malnourished whackadoo. All I know is that when you go to the doctor you’re more likely to hear “eat more vegetables” than “load up on meat and dairy pronto!”.
I feel better, I look better and I finally have a body I love. If being this veggie obsessed means breaking the laws of social norms, then lock me up and throw away the key!
Erica is a hilarious writer and mom of a toddler. She is highly entertaining to read and to follow on Twitter.
It’s all about the crunch of a snack

I love chips. Have to have them with a sandwich. If I ate hamburgers and was at a bbq, I would eat chips. Salty. Crunchy. Yum. I don’t care what any one says – I will not part with my chips – or popcorn for that matter. But, I will pay attention to the nutrition labels and choose the lesser of two evils when it comes down to calories and fat grams. I have to admit, I actually like the ‘baked’ chips more than regular. I buy the baked Lays when at Subway, etc. Ever had the Pita Chips from Trader Joes? OH MY GOOODNESS. Crunchy, light and oh so flavorful (i’ve only had the sea salt flavored) These are my new holy grail. So, I thought I would do a little comparison for you when it comes to chip labels. Read more

Eat Green after a workout

In addition to hydrating after a ginormous hike x2 at Runyon Canyon, I stopped by Whole Foods (aka Whole Paycheck) and picked up some lunch.. being a vegetarian, I try to eat as many raw foods as possible (versus dishes with umpteen ingredients and calories) Food directly from the earth can be so yummy. I will admit the Mediterranean salad did have a bit too much cheese and dressing. When buying salad already made from a deli, pick it from the top, not the bottom where a lot of dressing settles!
What have you done for your health lately?
Notice the small plates I eat from. Call it mind games, but my small plates look darn fulfilling don’t they. Fill up a small plate instead of a big dinner plate and notice how satisfied you will be!
