The Sweet Potato experiment

As a vegetarian, it’s shameful to say I have only had sweet potatoes a handful of times – at most. Not sure why. We didn’t really have them as kids growing up. In fact, I think the first time I had one was at my ‘Jewish’ friend Julie’s house. She made a HUGE Jewish type spread (think Thanksgiving spread) and she served sweet potatoes that were in a glass dish bubbling with butter, orange juice and marshmallows…WHAT? that was weird to me.
Fast forward to today…while at the grocery store stocking up so I can strategically plan yummy lunches, dinners and snacks, I spotted a sweet potato and decided to get one. I’m a potato girl inside and out. In fact, you’d think I was raised in Idaho (nope that was mom). Potatos are soo easy to make. I’ve never met one I didn’t like. Fried, mashed, baked, fried and sliced into ‘chips’ I’ll take em any way your servin them!
Pot Luck O fun

Saturday evening we went to a pot luck at a neighbors house to gather and be neighborly before all going swimming and in the hot tub. My husband is a hot tub junky and the same group seem to congregate every evening – so one guy invited everyone to his apartment beforehand. Being that neither one of us really cook (me because I suck) we were stuck on what to bring. My husband thought we could bring this really good pasta..yum, from Trader Joes. It’s Penne Arribiatta and it’s frozen with the sauce. You put in a skillet and heat up, so yummy and has a bit of a kick. The organizer was making lasagna and asked for us to bring a non pasta dish..Being that we are so neighborly, we happily obliged. We decided to bring a fruit salad. Not any boring fruit chunks tossed in a bowl, but a really cute fruit salad: a pineapple boat!!

I have to say, I am darn proud of us NON cooks or kitchen people that we came up with something so creative, yet EASY It’s all about the presentation. Would you be more inclined to eat from a pineapple boat or boring bowl?
It’s the little things in our daily lives that can make a big impact. So we served fresh, delicious fruit in a cute way – mission accomplished, I am complete.
So, I ask, what in your day can you take from boring to bodacious?
